Yellow Salsify, Western Oyster Plant/Goat's Beard (Tragopogon dubius)

The roots, leaves, stems, and flowers can be eaten raw or cooked. The roots can be roasted and used as coffee.

In the picture, the leaves on the left are not this plant's; our plant has long, narrow, alternate leaves that exude
(like the stem) a milky juice (latex) when cut; once dried, it can be used as gum.

The flowerhead opens in the morning and closes in the afternoon.
