Cow parsnip (Heracleum maximum)

It is edible; however, if you don't know for sure if it is cow parsnip, "when in doubt,
throw it out" (the leaves, the number of rays in the umbels--no more than 30, and
the stems are good identifiers). It can be used internal or externally after the parts
(roots, leaves, stems, and/or flowers) have been boiled. It tastes best if consumed
before the flowers blossom.

Internally, it can be used to aid the improvement of the digestive system; externally,
to alleviate sores and help with the pain of superficial wounds. It can also be used to
alleviate toothaches; but if the toothache is strong, it doesn't work.

Since some people are allergic to its sap (in combination with sunlight), it is advisable
to use gloves when handling it; long pants and long sleeves when approaching it.
