Crested Wheatgrass (Agropyron cristatum)
It is an edible cereal with about the same uses as wheat --with smaller seeds, that
provides protein and a good input of vitamins and minerals. Like wheat, and any
other cereal, the seeds can be eaten raw when green; however, when they are golden,
they become harder; then, they should be pounded to powder in order to make flour,
and use as such (to make bread, tasty thickening for stews, covering for fish to be fried,
etc.).
