Plains Cottonwood (Populus sargentii/Populus deltoides occidentalis)

It is high on vitamin C and protein. The powdered bark can be used as a thickener for
stews, soups, and bakery. A tea made with the leaves or the powdered bark can help
get rid of intestinal worms. The leaves, petioles, and young twigs can be cooked in a
variety of ways and eaten. The catkins can be eaten raw or cooked. Like all poplars, it
contains salicin, which the body transforms into salicylic acid when ingested. This acid
is a mild anti-inflammatory, analgesic, and the main component of aspirin.
