Western/Rocky Mountains Springbeauty (Claytonia lanceolata rosea)

These are the real corms (the underground, swollen parts of the stems which store nutrients,
and from which roots grow--not to be confused with bulbs, tubers, or rhizomes). If
eaten raw, they taste better and are softer than potatoes, but much smaller.
